Do you donate?

I hear a lot about donating items your household will not use that you have gotten free or were a moneymaker or due to some other circumstances such as developing an allergy.

Who do you donate those items to? I prefer to donate to my local Feeding America Food bank. There are 200 Feeding America Food banks in the USA. To find your local Food bank and to learn more go HERE.

No matter what organization you donate to, you should research that organization. Did you know there are 1.6 million non profits registered in the USA? Charity Navigator is a wonderful resource to use to research organizations before donating to them. Go HERE to research your preferred organization.

But what about those items that have reached or passed the "expiration" date? Unopened dry food and canned food are labeled with a "best if used by" date. Did you know that these items are still safe to eat? Check out the Food Management Guide written by the USDA HERE. If you don't feel safe eating the food, please donate it!

Did you know 1 in 6 people in the United States are faced with hunger? It could be your hard working neighbor, your senior parents, or your own children facing hunger issues.

Heavenly Delight Chocolate Dream

Ingredients

Crust

2 packages Honey Graham Crackers, crushed to crumbs
1/2 cup Margarine, melted

Filling

1 8oz package Cream Cheese, softened
1 cup Confectioners Sugar
1 8 oz carton frozen Cool Whip, thawed, divided
1 small package Vanilla Pudding mix
1 small package Chocolate Pudding Mix
3 cups cold Milk
1 Chocolate Bar, shaved (optional)

Directions

Preheat oven to 350*
In a bowl, combine Graham Cracker crumbs and melted Margarine.  Stir until crumbs are moist. Press crumbs into bottom of greased 9" by 13" baking pan (preferably with a lid). Bake 15 minutes. Cool on a wire rack.

In a mixing bowl, whip Cream Cheese until light and fluffy. Slowly add Confectioners Sugar. Beat until smooth. Add 1/2 of Cool Whip. Beat until smooth. Spread over cooled crust.

Whisk Pudding mixes and Milk for 2 minutes, or until soft-set. Spread over cream cheese mixture. Chill until firm. 

Spread remaining Cool Whip. Sprinkle with shaved Chocolate. Refrigerate until serving.

Breakfast Pizza

Our family loves pizza and breakfast. So why not combined them?

Breakfast Pizza

Ingredients

2 cups of flour
1 dozen eggs
1 1/3 & 1/8 cup of milk
2 cups southern style hash browns
1 Tbsp Lawry's Seasoned Salt
1 can Condensed Cheddar Cheese Soup
5 slices American Cheese, cut into 1/2" squares
Parmesan Cheese
2 cups shredded Mozzarella cheese
1/2 cup shredded Colby-Jack cheese

Optional Ingredients 

Garlic Salt
Oregano
Salt
Pepper
1 lb bacon, sliced into 1" strips
1 lb ground breakfast sausage
1 lb canadian bacon
1 lb ham (sliced or cubed)

Crust

Preheat Oven to 400 degrees.
Grease and flour a 10" x 15" baking sheet with sides.
Combine the following:
2 cups of Flour
4 Large Eggs
1 1/3 cups of Milk
Mix well.
Pour batter into pan and tilt to spread batter evenly on bottom.
Optional: Sprinkle batter with garlic salt, oregano, salt & pepper, etc.
Bake for 10 minutes.

Toppings

Now start preparing your pizza toppings.
Fry 2 cups of Southern Style Hash Browns until light brown.
Mix 8 Large Eggs, 1/8 cup of Milk, and 1 Tbsp of Lawry's Seasoned Salt. Fry eggs, chopping and flipping to make scrambled eggs. The small the egg pieces the easier to "sprinkle" on pizza.

Optional meat toppings

1 lb bacon- slice strips so they are about 1" long. Then fry.
1 lb ground breakfast sausage- place in fry pan and brown.
1 lb canadian bacon - fry in pan, like bacon.
1 lb ham-fry in pan, like bacon.

By now your crust is out of the oven and cooled. Do not be alarmed if crust raised while baking and has deflated while cooling.

Sauce

Take 1 can of Condensed Cheddar Cheese Soup, spread on crust.
Cut up 4-5 slices of American Cheese into 1/2" squares. Spread evenly on sauce.
Lightly sprinkle Parmesan over cheeses.

Let's Build it!

Spread southern style hash browns over cheeses.
Spread Scrambled Eggs over hash browns.
Sprinkle 2 cups of shredded Mozzarella cheese over top of eggs.
Sprinkle meat(s) over top of Mozzarella cheese.
Top with 1/2 cup of shredded Colby-Jack cheese.

Bake 400 degrees for another 10 minutes or until cheese is melted.

Notes

This recipe feeds 8 people. You can cut all ingredients in half, and use an 8" round pizza pan to feed 4.
You can also prepare the pizza before hand, just add 5 minutes bake time to finished pizza.
